Another attendee, Jaime Waite, who was diagnosed with celiac disease in her 20s, echoed Sullivan’s sentiments. She expressed relief at no longer having to scrutinize labels in traditional grocery stores. “What a fantastic win it is to find something that is entirely gluten-free; it’s just incredible,” Waite remarked. One of the market’s key figures, Sophie Nuesch, has a personal connection to the gluten-free movement. Her mother, Sarah Nuesch, was once a baker who sold bread at a farmers’ market until health issues led to a diagnosis of celiac disease. Harnessing her mother’s baking skills, Sophie opened Feel’n No Grain in August 2023, aiming to provide delicious gluten-free options to the community. “I think this is awesome. It’s amazing. I love seeing people smile,” Nuesch shared, highlighting the joy that comes from offering quality gluten-free products.
